Method: 
1. Use 600g portions of Nature 9-Grain Bread dough.
2. After first rest, using a rolling pin, roll dough into an oblong. Let rest 10 minutes.
3. Roll up dough pieces into an oval shaped loaf. Brush with egg wash and roll in oats. Place loaves on trays and let proof 80%.
4. Rest loaves for 15 minutes after being removed from proffer. Using a very sharp knife, make three cuts along the top of the loaf, on the diagonal. Bake 35 minutes with steam.
