| 1. Use 600g portions of Nature 9-Grain Bread dough. |
| 2. After first rest, using a rolling pin, roll dough into an oblong. Let rest 10 minutes. |
| 3. Roll up dough pieces into an oval shaped loaf. Brush with egg wash and roll in oats. Place loaves on trays and let proof 80%. |
| 4. Rest loaves for 15 minutes after being removed from proffer. Using a very sharp knife, make three cuts along the top of the loaf, on the diagonal. Bake 35 minutes with steam. |
