Recipes - Orange Cranberry Cake

Mega-Fruit Cream Cake 20
Eggs 8
Vegetable oil 6
Frozen cranberries 12
Brown sugar 2
Baking powder 0.2
Orange Emulsion #3050 1.3

Method: (USE PADDLE)
1. Scale at 600g loaf.
2. Gradually add all liquids to the mix. Mix for 1 minute on low speed.
3. Mix 3 minutes on medium speed. Scrape the bowl down.
4. Add the cranberries.
5. Mix 1-2 minutes on low speed.
6. Bake at 300-310ºF in conventional oven or bake at 250ºF in convection oven.
Note: Due to the high amount of fresh fruit in this product, ensure to give full bake. Make sure that the wire tester comes out clean and dry.
