Recipes - Muesli Bread

Method: (FOR SPIRAL MIXER)
1. Blend dry ingredients. Add honey, yeast and water.
2. Mix 2 minutes on low, then 5-6 minutes on high speed or until dough fully develops.
3. Add raisins to dough. Mix on low speed for 1 minute.
4. Required dough temperature 80-82ºF (27-28ºC).
5. Rest dough for 20 minutes. Scale and round.
6. Rest for further 10 minutes.
7. Make up into desired shapes. Give 3/4 proof.
8. Bake at 410-420ºF (210-215ºC) with steam.
