Recipes - Nature 9-Grain Bread

Nature 9-Grain Bread Base 20 44 0
Strong Bakers Flour 20 44 0
Fresh Yeast 1.2 2 10

Method: (FOR SPIRAL MIXER)
1. Blend dry ingredients. Add yeast and water.
2. Mix 2 minutes on low, then 5-6 minutes on high speed or until dough fully develops.
3. Required dough temperature 80-82ºF (27-28ºC).
4. Rest dough for 20 minutes. Scale and round.
5. Rest for further 10 minutes.
6. Make up into desired shapes. Give 3/4 proof.
7. Bake at 410-420ºF (210-215ºC) with steam.
For hook mixer: Mix 1 minute on 1st speed, then 12 minutes on 2nd speed.
