Mix for 1 minute on low speed. Add the eggs and water, mix for 1 minute on low speed. Scrape the bowl down and then mix on medium speed for 3 minutes. Add carrots and chocolate chips, mix an additional 2 minutes on low speed. Scrape down the bowl and give batter a mix by hand. Scale 1100g (2Lb. 7 Oz) of batter in greased 9" round tube cake pans. Bake for 60 minutes at 350ºF (180ºC) When cakes are cool, dust with icing sugar. Note: This recipe can also be used for loaf cake, muffins or bundt cakes. Serve with fresh whipped cream or vanilla cream.
