Recipes - Chocolate Carrot Cake

Elite Devil's Food Cake Mix #4330 8 6
Ground cinnamon 1
Vegetable oil 2 1
Whole Eggs 1 10
Water 13
Shredded carrots 5 15
Chocolate chips 3 4
Yield: 8x9" round cakes

Method: Paddle Attachment
Place cinnamon, oil and mix in mixing bowl. Mix for 1 minute on low speed.
Add the eggs and water, mix for 1 minute on low speed. Scrape the bowl down and then mix on medium speed for 3 minutes.
Add carrots and chocolate chips, mix an additional 2 minutes on low speed. Scrape down the bowl and give batter a mix by hand.
Scale 1100g (2Lb. 7 Oz) of batter in greased 9" round tube cake pans.
Bake for 60 minutes at 350ºF (180ºC)
When cakes are cool, dust with icing sugar.
Note:
This recipe can also be used for loaf cake, muffins or bundt cakes.
Serve with fresh whipped cream or vanilla cream.
