Batter-Moist Euro-Sponge 12KG

All ingredients must be at room temperature.
Method (USE WHISK)
Pre-mix Batter-Moist Euro-Sponge and sugar in mixer for 1-2 minutes on low speed. Add eggs and water to the mixture.
Whip for 1 minute on low speed. Scrape down bowl.
Whip for a further 6-15 minutes on high speed. Bake temperature: 180-190˚C (365-380˚F)
