1. What is a flavour?

Flavour is the sensation that combines taste, aroma and mouth-feel. A flavour is any food ingredient that is used to add flavour to a food product.

2. Why should I use flavours?

Using our flavouring is a cost effective way to enhance the taste of your products while avoiding the consistency problems involved with using fruit or other whole flavouring ingredients. Adding whole flavouring ingredients like fruit can be extremely costly. Our flavours provide the same high quality taste benefits, but at a much more reasonable cost. Furthermore, adding fruit and other whole products can cause consistency problems. Fruit is a seasonal product. This means that taste and quality can fluctuate as the seasons change. Our flavours undergo analytical tests and sensory evaluations to ensure that they meet specs. They provide you with the consistency that you need to be in control of your finished product.

3. What are flavour concentrates? What is the difference between Supreme flavours, Bakers flavours and emulsion flavours?

Flavour Concentrates are simply concentrated flavours. Our flavour concentrates are characterized not only by their consistent quality and long shelf-lives, but also by their outstanding flavour and aroma. Flavour concentrates are available in liquid or powder formats and can be used for virtually any application. They are available in either natural or artificial flavours, and include our roster of high quality essential oils and savoury flavours. Because of their high concentration, our flavour concentrates require only very low usage levels, beginning at 0.1% in the finished product.

Supreme Flavours is our line of top-quality natural flavour extracts. When optimum flavour quality is your goal, our Supreme line of flavours can be used with confidence to produce the very finest results, whatever the application. Since they are made with 100% natural ingredients, Supreme flavours offer the highest quality extracts available. They are alcohol based, and offer good bake-, heat- and freeze stability. The recommended usage level is from 2 – 4% in the finished product.

Bakers Flavours is our line of highly bake-stable artificial flavours. Bakers flavours incorporate advanced flavour technology to produce high quality artificial products that offer true taste and do not “bake out” or evaporate during the baking process. They are often blended with natural extracts to achieve the ultimate flavour profile. Bakers flavours are either alcohol or propylene glycol based, and require 1.5 – 3% usage in the final product.

Emulsion Flavours is a line of high quality, non-alcoholic and stable flavours. Due to their high concentration, our emulsions are also very cost effective. They are available in either natural or artificial and require 1 – 2% usage in the finished product. In some cases, when designated “flavour and colour” (or F&C), the emulsion will colour as well as flavour the final product. Because these products do not contain any alcohol, they are the most bake, heat and freeze-stable of all the product lines.

4. For which applications are these products best suited?

Since their recommended usage level is generally very low, our Flavour Concentrates are primarily used in larger volume production.
Supreme, Bakers and Emulsion Flavours , whose usage levels are higher, are effective and convenient in lower volume production.

5. What types of vanilla flavour does Embassy provide?

Embassy Flavours manufactures and sources high quality pure, artificial and blended vanilla extracts as well as vanilla flavour concentrates in both liquid and powder formats. We sell vanilla primarily in 4 different varieties:
1. Pure Vanilla – in strengths ranging from single-fold (weak), to 10-fold (strong)
2. Vanilla WONF Blends
3. Vanilla-Vanillin Blends
4. Artificial Vanilla

6. How can I tell if a product is natural, artificial, or N&A (natural and artificial)?

Look at the ingredients list. If the product is natural, the ingredients list will include “natural flavour”. If the product is artificial, it will include “artificial flavour”. If the product is N&A (natural and artificial), it will include “natural and artificial flavour”.

7. What is the difference between natural and artificial flavours?

A natural flavour is a combination of naturally derived aroma chemicals and/or essential oils. We use only the finest raw materials from around the world in creating our natural flavours. Though natural flavours are more expensive than their artificial counterparts, they provide the very best flavour quality. Using natural flavours also allows you to maintain a clean label declaration.
An artificial flavour is a man-made reproduction of a natural flavour. Our chemists use the latest flavour technology to produce artificial flavours which are chemically identical to the flavour compounds found in nature. Even though the very same chemicals are used, they must be classified as artificial because they have been manufactured rather than extracted from nature. Many artificial flavours also have a large natural content, but still must be classified as artificial because they are not fully derived from natural sources. An advantage of artificial flavours is their heat stability and performance under difficult conditions. They are very often much less costly than the equivalent natural flavour.

8. What are WONF flavours?

WONFstands for “With Other Natural Flavours”. It refers to a natural flavour which uses other natural flavours to optimize the taste. A WONF gives you the same label declaration benefits as a natural flavour.

9. What are N&A flavours?

N&A stands for “Natural and Artificial”. It refers to a flavour which includes both natural and artificial ingredients. N&A flavours must be labelled as artificial because they are not fully derived from natural sources.

10. What does it mean when a product is listed as “flavour and colour” (or F&C)?

Flavour and colour designates a product which will colour as well as flavour the final product. F&C flavours are most common in our Emulsion Flavour line.

11. How should I store your flavours?

Most of our flavours should be stored in a cool area, out of the direct sunlight. Storage instructions specific to each product can be found on the spec sheets.

12. What are the shelf-lives of your flavours?

Our flavours have shelf-lives varying from 180-360 days. Shelf-lives specific to each product can be found on their specification sheets. To find the spec sheet for the product you’re interested in, please use our Search Products page.

13. What quality control measures do you take?

To provide our customers with quality assurances, we do analytical tests and sensory evaluations on all of our flavours. Our customers can be confident that our products meet specs and have excellent taste consistency.

In addition, we are HACCP certified. This rigorous quality assurance system is designed to significantly reduce the risk of contamination and increase the overall quality and consistency of products in the food industry. See the HACCP page for more information about HACCP.

14. How many of your flavours are Kosher certified? What type of certification do they have?

Embassy Flavours is under the supervision and certification of the Kashruth Council of Toronto and 99% of our products are Kosher (Dairy and Parve) under the bearing COR 284.

15. Do you keep your manufacturing facility free of any major allergens?

In order to reduce the risk of cross-contamination, the Embassy Flavours facility does not manufacture products with peanuts or shellfish as ingredients. In addition we do not allow our employees to bring peanut or shellfish foods into the manufacturing facility or any of the areas connected to it.

16. Where can I find nutritional or allergen info for a specific product?

Nutritional and allergen information is available for most products on their specification sheets (spec sheets). You can access a product’s spec sheet by using the Search Products page. If the nutritional or allergen information is not available for the product you’re interested in, please Contact Us and we’ll send the appropriate information to you.


17. Some of your flavours are labelled “single-fold”, “3-fold”, “10-fold”, etc. What does this mean?

This is used almost exclusively to describe the strength of natural vanilla flavours. The strength of a natural vanilla flavour ranges from its weakest at the single-fold variety, to its strongest at its 10-fold variety.

At times the term is also applied to artificial vanilla flavours. In its artificial form, vanilla flavour can reach above the 10-fold level. For example, Embassy Flavours carries 16-fold and 32-fold varieties of artificial vanilla flavour.
